- 1 ½ cups flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- ½ tsp.salt
- 3 ripe bananas, mashed
- 1 ½ cups blueberries, fresh or frozen
- ¾ cup sugar
- 1 egg, slightly beaten
- ½ cup butter or margarine, melted
Muffins: Preheat oven to 375°. Grease muffin tin or line with paper cups. Combine dry ingredients in a large bowl. Toss in blueberries. In a separate bowl, mix bananas, sugar, egg, and butter. Stir wet ingredients into dry, just until moistened. Fill 12 muffin cups.
Topping: Mix 1/3 cup brown sugar, 1 tbsp flour, and 1/8 tsp cinnamon. Cut in 1 tsp. butter or margarine until crumbly. Sprinkle over muffins. Bake at 375° for 18-20 minutes.
